Unpack?
    (mkdir /var/tmp/junk &&
     cd /var/tmp/junk &&
     git init && git unpack-objects) <.git/objects/pack/pack-$that_one.pack
It might also be interesting to see
    git verify-pack -v .git/objects/pack/pack-$that_one.pack
