Yeah, but, with DONT_REPEAT_PREVIOUS, it would be possible using:

[trailer "signoff"]
         key = "Signed-off-by:"
         if_exist = dont_repeat_previous
         if_missing = append
         command = echo "$GIT_COMMITTER_NAME <$GIT_COMMITTER_EMAIL>"'
